Recipe: Crockpot – Low Carb Coconut Curry Thai Chicken
2lbs boneless skinless Chicken breasts
1 can Trader Joes light coconut milk
1 bag frozen Asian vegetables
2tbsp curry powder or curry paste (I had madras curry so I used it) green, yellow, red, garam masala whatever you want it all changes the flavor.
2tsp crushed black pepper
1 tsp-tbsp cayenne pepper (depends how hot you want it)
Optional: 3tbsp brown sugar
Optional: 2 whole jalapeños
Optional: 2tbsp fresh baking coconut
Throw all in a crockpot and mix then cook on low for 4.5hours make sure you stir it at least once during that time.
Pull out and eat! If you don’t care about carbs you can serve over brown rice. If you are on a low carb diet: 😡put down that damn rice!! You can’t have it!!
For those of you that claim you can’t cook: you can’t possibly mess up a crockpot recipe! Just make sure you don’t miss any ingredients and make sure you shut off after the allotted time!
The best part is they all take minutes to prepare the worst part is they take hours to cook! The second best part when it’s done the meat will just crumble apart in your mouth!
Remember if you want low carb cut out the sugar! You don’t need it!
