Recipe: Lou’s Mexican Tuna
Mexican Tuna (even though I’m 100% Italian lol)
2-4 cans tuna
1 cup black beans,
1/2 cup red kidney beans,
1/2 cup corn,
1 cup sliced jalapeños,
1/4 cup diced green and/or red peppers,
couple diced scallions,
optional baby corn a few pieces
1/2 cup plain fat-free greek yogurt
1/4 cup fat-free sour cream
This Recipe makes healthy and fun Tuna, why have the same boring tuna!
Also eliminate the mayo tradition.
Get plenty of vitamins and minerals from the added veggies and added protein and fiber from the beans
