Cajun Gourmet Tarragon Chicken Salad


Are you tired of plain chicken salad? Chicken, celery black pepper and mayo.
Are you looking for a healthy alternative to mayo? Try the recipe below. I couldn’t believe it is mayo free!

4 nice size pieces grilled chicken
1/2 cup plain fat-free greek yogurt
1/4 cup fat-free sour cream
1 tablespoon spicy brown mustard
1 tablespoon minced fresh tarragon leaves
1 teaspoon Cajun seasoning
2 celery stalks diced
4 eggs chopped
1/3 carrot diced or shredded
1/4 teaspoon cayenne pepper
1/4 cup red cabbage diced optional

Or any comparable vegetable,
red onion, scallion, radish etc…

For those of you that don’t like chicken: Substitute turkey for chicken or
Substitute vegan chicken aka tofu for real chicken (yuk)

For a different taste:
Substitute curry for Cajun seasoning.

Mix ingredients in bowl, chill overnight (optimal time to soak in ingredients and chill)

Serving Options:
Cup (healthy option)
Rice Cake
Large Romaine Lettuce Leaf and make lettuce cups (most healthy option)

  1. My next batch I’m going to cut to:
    1/4 cup plain fat-free greek yogurt
    1/8 cup fat-free sour cream

    And double the eggs to 4 eggs chopped

    **Hint** for an easy super fast fix get ingredients from supermarket salad bar and estimate. You can find a bunch of different tweaks and additives to this recipe there.
